A Merry, Merri Thanksgiving

With the holidays approaching, our kitchen is gearing up for our annual Thanksgiving feast! We would love to share some tips from Executive Chef Jack McCann to help make your Thanksgiving the best yet!

Jack recommends you brine your turkey using the following recipe:

  • 1 cup brown sugar
  • 1 cup kosher salt
  • 2 gallons of water
  • 4 bay leaves
  • 4 sprigs of rosemary
  • 4 sprigs fresh thyme
  • Juice of 2 fresh lemons

A 5 gallon bucket works best for this, but anything of a similar size will work as well.

Mix salt, sugar and water until the solids are dissolved. Place the turkey in the brine and refrigerate for 24 hours.

Remove from brine, pat dry and cook bird according to size.
